Apple Sage “Sausage” Chestnut Stuffing

Each and every year, at this very same time, we go in search of unique and delightful recipes to share with our Holiday guests. Since so many of us are making nutritional decisions based on our ethical values, it is always nice to be able to share a dish that doesn’t compromise any living creatures.  This year, The Green Connoisseur will be sharing some of it’s new found favorites for you to put on your dining room table. Today we’d like to start off the series with a mouth-watering stuffing recipe.

This Apple Sage “Sausage” Chestnut Stuffing is written in vegan style, but can easily have some of the ingredients substituted to include butter, turkey broth or organics for those of you that choose those dietary standards.

7 cups of diced bread cubes, crusts removed
3 tablespoons vegan margarine
1-1/2 cups of thinly sliced celery
1 cup chopped sweet onion
1/2 cup finely chopped parsley
1 tablespoon poultry seasoning
1-1/4 cups chopped roasted chestnuts
1 medium chopped apple
5 leaves chopped fresh sage
1/4 teaspoon black pepper
1-1/4 cups vegetable broth
1/4 cup crushed walnuts
1-1/2 cups chopped apple sage vegan “sausage”

Directions:

1. Saute the vegan “sausage” until the outside becomes crisp, then set aside.

2. Melt margarine in a medium saucepan over medium-high heat. Add the celery, onion, parsley and poultry seasoning. Saute until tender.

3. Add chestnuts, apple, 1/2 of the sage, and pepper. Saute until tender.

4. Add broth and walnuts. Let simmer for a few seconds then fold in the bread cubes. Adjust the amount of bread crumbs to taste.

5. Fold in the bread crumbs and the remaining sage.

6. Enjoy!
